Rum is made by distilling a fermented mixture of sugar and water. This sugar comes from the sugar cane and is fermented from cane juice, concentrated sugar cane juice, or molasses. Molasses is the sweet, sticky residue that remains after sugar cane juice is cooked and the crystallized sugar is extracted. Most Rum is made from molasses. Molasses is more than 50% sugar, but also contains significant amounts of minerals and other trace elements, that can contribute to the final taste. Rum made from cane juice, mainly produced in Haiti and Martinique, have a naturally "smooth palette". Depending on the recipe, the "wash" (the sugar cane juice or molasses and water) is fermented, using cultured yeast or wild yeast in the air, for a period ranging from 24 hours for light Rum to a few weeks to produce the heavy, full flavoured variants.

DISTILLATION OF RUM


Rum is distilled in distillation columns, the type of distillation kettle has a profound effect on the final character of the rum. All Rum still comes as a clear, colorless spirit from the distillation process. Laying down in barrels and the use of added caramel determine their final color. Since the caramel is obtained from roasted sugar, it can be said that only natural dyes are used in Rum. Lighter Rum are produced in column stills, after which they are usually filtered on charcoal and sometimes ripened in old oak barrels for a few months to add a certain amount of softness. Most light Rum has minimal taste and aroma and are similar to Vodka, especially brands that are charcoal-filtered. Heavier Rum species are usually distilled in pot stills (pear-shaped), these resemble the stills used to produce Cognac and Scotch whiskey. Pot stills are less "efficient" than column stills and flavoring elements are transferred to the alcohol in this way. Some Rum brands use a mixture of pot still rum and column still rum.
