Glenmorangie Distillery

The Glenmorangie distillery is located on the coast of the Dornoch Firth, north of the town of Tain, directly on the rail line that runs from Inverness to the towns of Thurso and Wick. The name Glenmorangie is pronounced "glen moorendzhie" and comes from the Gealic, meaning "valley of tranquility". The name Glenmorangie comes from the farm where the distillery started and the nearby forest has the same name. In 1738, beer was started on the Morangie farm. The water is still drawn from the same water source as when it was used to brew the beer. William Matheson, owner of the farm, received a license to distil in 1843. The farm was rebuilt and the distillery was started, which still bears part of the name. In 1887 the Glenmorangie Distillery Co. LTD. and the farm underwent a major renovation.

After the renovation, Glenmorangie was the most modern distillery in Scotland at that time. The stills were indirectly heated with steam by passing the steam through a spiral in the still. Especially the newly designed stills were very special, these stills are still the highest in the Scottish whiskey industry. The high height would ensure that the end product would be purer, because the heavier alcohols would fall down again and thus would not reach the curvature at the top of the neck. Just before World War 1, Glenmorangie was sold to the Macdonald & Muir blender and Mr. whiskey broker. Durham. Around 1930, Macdonald & Muir bought Mr. Durham from and who still owns the Glenmorangie distillery.

Due to problems with sales during the reclamation in America, production was stopped in 1936 and also during the second world war the distillery closed again due to lack of grain. In 1948 the distillery returned to the old level. The distillery was thoroughly restored in the 1970s. The malt floors disappeared and the number of stills was doubled in 1980 to four. A few years later the lands where the Morangie farm is located and also the Tarlogie water source were purchased in order to guarantee the quality of the water. In 1990 the number of stills was increased to eight. The stillhouse now has four wash stills and four spirit stills. The stills are quite small but have a remarkably long neck, making them still the highest in Scotland. They are fired by steam.

The water for the preparation of the malt comes for centuries from the "Tarlogie Spring" source. This water is hard and contains a lot of minerals. Most water sources in Scotland contain no or few minerals and give soft water.

Ex bourbon barrels are used for maturing the new spirit. The special thing about these barrels is that they are selected by Glenmorangie in the United States and new barrels are also made there. These barrels are on loan for four years to the bourbon distilleries Heaven Hill and Maker's Mark in Kentucky. After these barrels have been used for four years for maturing bourbon whiskey, they are shipped to Scotland and there they are used at Glenmorangie for another 30 years for the maturing of the malts.

Glenmorangie introduces first whiskey with wild yeast

Rich, fruity single malt in honor of the tenth anniversary of the Private Edition series
Glenmorangie celebrates the tenth anniversary of its unique Private Edition series with its first whiskey of wild yeast from its own barley. The Glenmorangie Allta, which is Scottish-Gaelic for 'wild', is a rich, round whiskey with aromas of biscuit, soft flowers, orange and creamy vanilla. With this tenth whiskey the distillery illustrates the importance of yeast in the creation of the layered flavors of Scotch whiskey.

Glenmorangie Cadboll Barley

Yeast is traditionally one of the basic ingredients of Scotch whiskey. Over the years, however, its influence on taste has been increasingly forgotten due to the growing emphasis on other aspects of the production process. With a background in yeast physiology, Dr. Bill Lumsden, Glenmorangie's Director of Distilling, Whiskey Creation & Whiskey Stocks, has always been aware of the potency of yeast. Years ago he heard from the famous, now deceased, whiskey expert Michael Jackson a story about the unique 'house yeast' that would have been in possession of Glenmorangie. The memory of this story made him further deepen in the influence of yeast on the taste of whiskey.

During a walk through the barley fields next to the distillery, Dr. Bill Lumsden picked some Carribean barley grains, which he took to his lab. There he discovered Saccharomyces diaemath, a hitherto unknown wild yeast species that proved suitable for making whiskey. He had this yeast type cultivated by the yeast supplier and added it in the production process together with the barley. The result was an exceptionally fragrant drink. The spirit was then matured in high-quality, often re-used, bourbon casks to emphasize the fruity character of the yeast. The rich, creamy whiskey that emerged years later became a new highlight in the history of Glenmorangie.

About Dr. Bill Lumsden
Dr. Bill Lumsden is the famous Director of Distilling, Whiskey Creation & Whiskey Stocks from Glenmorangie. By whiskymakers he is seen as an innovator by introducing new whiskey types in the single-malt market. Thanks to the work of Dr Bill Lumsden and his team, the Glenmorangie Company was named Distiller of the Year at the IWSC in 2012. Dr. Bill Lumsden is a doctor in biochemistry and has worked at the Glenmorangie Company since 1995, where he combines craftsmanship and science. He is praised for his groundbreaking techniques for sustainable wood use, his experiments with special vessels from different years and his application of various woodworks. Dr. Bill Lumsden has won numerous prestigious awards and honors. In 2015 he was appointed ISC Distiller of the Year. He was honored with the title Master Distiller / Blender of the Year at Whiskey Magazine's Icons of Whiskey 2016 Awards. In addition, he won the International Whiskey Competition Award for Master Distiller of the Year in 2016 and 2017. In 2018 he was again appointed as ISC Distiller of the Year.

About yeast
Yeast is next to barley and water one of the three ingredients of Scotch whiskey. Yeast is added to the wort during fermentation, whereby the sugars present are converted into alcohol. Years ago Scottish whiskey makers used yeast from their own 'house stem'. Over the years many distillers, however, switched to a specific strain of Saccharomyces cerevisiae, the yeast species used by the beverage sector. This strain converts the sugars into alcohol very efficiently and gives a neutral taste. Whiskymakers used other aspects of their craft, such as ripening, to determine the taste. Dr. Bill Lumsden, through his doctorate in yeast physiology, realized that the influence of yeast on taste was forgotten. With Glenmorangie Allta he brought this influence to the fore.

About the development of Glenmorangie Allta
Yeast is all around us: in the ground, on plants such as barley, and even on our skin. But not all species are suitable for distillation. Dr. Bill Lumsden trusted his intuition and sent a sample of the Cadboll barley, which is grown on the fields near Glenmorangie in the Highland region, to the laboratory for testing. He discovered that the yeast in those ears, Saccharomyces diaemath, was ideal for making whiskey. He had Saccharomyces diaemath cultivated by the yeast supplier of Glenmorangie. When the barley on which the yeast grew was ready for use in the distillery, he brought it together in the production process. This created an exceptionally fragrant drink, which clearly shows the influence of yeast on taste.

About Michael Jackson
Writer and journalist Jackson was an authority in the field of whiskey and is still admired by whiskey connoisseurs around the world. Jackson published books on beer, but also wrote a series of books on whiskey, including Michael Jackson's Malt Whiskey Companion and Whiskey: The Definitive World Guide. He received numerous honors for his work and was appointed Master of the Quaich by the exclusive international society Keepers of the Quaich, which honors those who make an important contribution to the Scottish whiskey sector.
