Traditional process, pure ingredients NOTARIS Jenever specialities are based on three superior grains. Once these grains have been ground in the mill, there follows a process of distilling, splitting, mixing and redistilling. 

A traditional process that takes time. So much time, in fact, that NOTARIS can only be distilled in small quantities.

- a lovely well-rounded flavour with a clear hint of wood due to the 15-year ageing process;
- contains 4 malt wine distillates;
- distilled 4 times in still;
- aged for 15 years in oak barrels;
- limited edition;
- drunk at room temperature.

NOTARIS Vintage 1991 Jenever
- a lovely well-rounded flavour due to ageing process lasting a minimum of 20 years;
- contains 4 malt wine distillates;
- distilled 4 times in still;
- from a specially selected oak barrel, sealed in 1991;
- limited edition;
- drunk at room temperature.

NOTARIS Jenever products were among the winners at the World Spirits Award in 2012. During this event the products were judged by an independent and expert trained panel of judges.

The results were as follows: NOTARIS Young Grain jenever, Malt Wine Jenever organic, V.О., X.O and V.X.0. all won a gold medal. NOTARIS Vintage 1991 even won a double gold medal.

The products were judged purely on taste. With this achievement Herman Jansen Beverages Nederland BV was designated a 'World-Class-Distillery' and earned itself the prestigious title ‘Distillery of the Year 2012’

Left to mature
After the distillation process, NOTARIS needs time to develop its unique flavour. Stored in oak barrels, it is left to mature undisturbed: three years for ‘NOTARIS Very Old’, ten years for 'NOTARIS Xtra Old' and as long as 15 years for 'NOTARIS Very Xtra Old'. In 2012 the first NOTARIS Vintage came onto the market.

This was the NOTARIS Vintage 1991, a magnificent jenever from a barrel that was deposited in the cellars of De Tweelingh distillery
in 1991 to mature there for at least 20 years. Its intensely rich bouquet of fragrances makes it clear that Notaris distillates can still surprise after many years of maturation. Now the huge potential in terms of aromas in these complex distillates is becoming clear.

Schiedam's seal of quality
As the city of jenever, Schiedam has a reputation to uphold. Since 1902 the 'Egte Schiedamsche Moutwijn' (Genuine Schiedam Malt Wine) has been protected with a Gemeentezegel (seal of approval from the municipal authority). This seal is a guarantee that the jenever has been distilled in accordance with 'Gemeente blad no. 5' and 'Gemeenteblad no. 6' from 1902.

These bye-laws describe how malt wine jenever should be distilled in 4 consecutive steps. The seal of approval bears the signature of the mayor. NOTARIS  Jenever specialities bear this seal of approval
